LP BROOKIES | RECIPE



Hello everybody,
one day before Christmas, super exciting!!! In fact I wasn't supposed to write this post, but I feel like I have to :)
So Lily Pebbles, who besides has one of my favourite blogs, that I read every day, has posted her sister's recipe for Brookies, so brownie cookies. The recipe has been on her blog for about 2 weeks, but it was two days ago, when I decided to make them myself. And that was definitely a very good choice.

Those cookies in deed are like brownies in a mini version. I don't really know if I can post this recipe, but I feel like I have to. Their just too good! And also I was super surprised, when I madde about 60-70 cookies, That's just insane.

Ok, I'm going to stop rave about them and actually hand you the recipe.

What you're going to need is:

85g cocoa powder
400g sugar
125ml oil
eggs
teaspoons vanilla extract/ or as I used vanilla sugar
250g plain flour
2 teaspoons baking powder
1/2 teaspoon salt
60g icing sugar 

What you'll have to do:

  1. In a bowl or a mixer, mix together: cocoa, sugar and oil. Then beat the eggs in and add the vanilla extract or vanilla sugar. In another bowl mix flour, baking powder and salt, and to this bowl add the cocoa mixture. Mix all together. Cover the dough, and chill for at least 4 hours.
  2. Preheat oven to 180 C.  Line baking trays with parchment. Pour icing sugar  onto a plate and using a metal tablespoon, spoon and roll mixture into 2.5cm balls coating each one with the icing sugar before placing onto prepared trays.
  3. Bake the dough cover in the icing sugar from 10-12 minutes. Let them cool after taking out of the oven, before placing them on a plate.
DONE!!!!

  1. Omg these look so good!! Better then when I tried to make them. I tried to make these last year for Christmas but instead of looking like this, they came out as hard as stones lol.
